Thai zoodle salad 

Got a raw pad Thai salad from the farmers market this past Saturday and it was so so good, I’ve been thinking about it ever since. Our garden is overflowing with zucchini, mint and cilantro so I recreated it myself tonight for dinner. It was so good everyone got seconds! And of course I topped mine with extra almond butter sauce because who doesn’t love almond butter? I could just eat a whole jar in one sitting 🙈


Ingredients: 

  • 1 red cabbage 
  • 2 bell peppers (orange and yellow)
  • 2 large zucchinis
  • 3-4 carrots
  • 1/2 cup shelled edamame, thawed
  • 2 Tbsp fresh cilantro 
  • 2 Tbsp fresh mint
  • 2 Tbsp green onion

Sauce:

  • 1/4 cup almond butter 
  • 1/4 cashew butter
  • 2 Tbsp sesame oil
  • 2 Tbsp liquid aminos
  • 1 Tbsp ginger
  • 1 tsp minced garlic

In a large bowl shred cabbage and carrots. Spiraling zucchini and cut into small pieces. Chop bell peppers and mix all together. Chop cilantro and mint and add it all together. Mix in chopped mint and edamame. Set aside. 

For the sauce, combine all ingredients and add water until a liquid dressing-like consistency. Mix sauce with salad when serving so it doesn’t get soggy. Enjoy!
