Sweet Potato Veggie Shepherds Pie

This shepherds pie is perfect when you just want some good ole comfort food but are still trying to be healthy. This is so full of flavor and is whole30 and paleo approved. I added vegetables that I had in my fridge but feel free to add whatever vegetables you like!


  • 2 handfuls of spinach, chopped
  • Pint of mushrooms, chopped
  • Bunch of asparagus, chopped
  • 3 stalks of celery, chopped
  • 2-3 carrots, chopped
  • 1/2 red onion, chopped
  • 2 cloves of garlic, minced
  • 2 can of tomato paste, sugar free
  • 1 lb beef or any kind you like
  • 1 Tbsp pepper
  • 1 tsp salt
  • 1 tsp parsley 
  • Handful of basil chopped
  • 1 tsp chili powder 
  • 1 tsp cumin
  • 2 sweet potatoes. 

Preheat oven to 350 degrees. Boil and mash sweet potatoes, set aside. Brown meat in a medium saucepan, add vegetables and cook until tender, about 5-10 minutes. Add tomato paste and spices and let cook for about 5 minutes. Place in a pan or pie tin and spread sweet potatoes on top. Bake for 15-20 minutes or until sweet potatoes start to brown. Serve immediately. Enjoy!
