Protein Key Lime Chia Pudding

Pudding Recipe (serves 4):

  • 2 cups coconut milk
  • 6-8 Tbsp chia seeds
  • 1 Tbsp vanilla 
  • 1 Tbsp honey* 
  • Juice & zest of 1 lime
  • Scoop of Vanilla protein powder (I used sun warrior vanilla

Avocado topping: 

  • 2 avocados
  • 1 Tbsp honey*
  • 1/4 tsp of vanilla 

Combine pudding ingredients, whisk and let set in the refrigerator for 30 minutes. Divide into 4 containers or one large container. Refrigerate for 1 hour. 

While refrigerating, combine all ingredients for avocado topping. Top each container with about 2 Tbsp of each. Refrigerate overnight. Top with shredded coconut or any other toppings you prefer. Enjoy! 
* to make vegan or vegetarian friendly, sub agave or maple syrup for honey.
