Healthy “Alfredo” Sauce

Earlier in January, I did a 21 day sugar detox – no added sugar, stevia, xylitol, not even honey or maple syrup. During the 21 days, I realized how many things sugar were actually in. Sugar is hidden in things you would not even think about like deli meats, broth and canned tomatoes. Although it was hard, these 21 days did force me to be creative in the kitchen. One of my favorite recipes I made was an “alfredo” sauce that I came up with while experimenting. I was in the mood for alfredo pasta, so boom..spaghetti squash it was..but how do you make a somewhat healthier alfredo sauce without sugar? You get creative thats how. So I will warn you these are estimated measurements so feel free to test it out yourself and add whatever you feel to your own!

Recipe: 1 serving

1 spaghetti squash cooked and shredded

1 tbsp butter

1/4 cup of chopped mushrooms

1/4 red onion

handful of spinach

For the sauce:

1/2 lemon

3 tablespoons of water

1/4 cup of feta cheese

1/4 cup of plain greek yogurt

 

pepper to taste

In a pan, sauté onions and mushrooms in the tbsp of butter until soft and tender. Set aside. In the same pan, add greek yogurt feta and water. Stir to mix together and heat for about 2 minutes. Add lemon juice and pepper to taste. Stir together sauce mixture and vegetable mixture until vegetables are coated. Top your spaghetti squash and enjoy!
