Mini Protein Pancakes

I remember Saturday and Sunday mornings as a little kid; I would always wake up to the smell of homemade pancakes for breakfast! Those were always the best days! Usually in the mornings I stick to the regular smoothie or oatmeal, but this morning I was craving pancakes so I decided to test out a healthier version. I’ve made the 3 ingredient pancakes with a banana and eggs, but something about the texture doesn’t remind me of normal pancakes! These little guys on the other hand are everything you’d dream of and more! They’re made with cottage cheese, which I have totally been on a kick for lately because it is high in protein with 10-14g per serving! This recipe makes about 4 servings and I put them in my nutrition calculator and it comes to 135 calories, 14g carbs and 11g of protein! That’s a lot better option than your regular old pancake mix! These are quick to whip up and are perfect for the kiddos!

Ingredients:

  • 1 C. cottage cheese (I used 1%)
  • 2 cage free eggs
  • 1/2 C. rolled oats
  • 1-2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. raw honey
  • 1 tbsp. coconut oil

Directions:

In a blender, combine all ingredients and blend for about 2 minutes or until batter is smooth. In a skillet, melt coconut oil and spoon batter and cook on low-medium heat for about 2 minutes on each side (once it starts to bubble, flip!). Top with almond butter, sugar free syrup, fruit, greek yogurt, or whatever your heart desires! Enjoy
