Cauliflower “Fried” Rice

One of my favorite vegetables is cauliflower because it’s so versatile in what you can do with it. You can make rice, tortillas, pizza crust, or even just eat it plain- the possibilities are endless! This rice recipe is so fast and easy, plus it’s always a big hit with the whole family! I love fried rice so this is always one of my favorites but you can cook it plain or add other seasonings of your choice!

Ingredients:

1 head of cauliflower, rinsed

1/2 red onion, chopped

2 cloves of garlic, minced

3 carrots, chopped

2 Tbsp. coconut oil

1/4 C. Braggs liquid aminos (or low sodium soy sauce)

Directions:

Rinse and chop your cauliflower into big chunks. Place your cauliflower in a food processor and blend for about 10-20 seconds until it reaches a rice consistency (I had to blend one half at a time then transfer to a bowl). Once cauliflower is blended, place in a bowl and set aside.

In a large skillet, heat coconut oil and sauté onion, carrots and garlic until fragrant. Add cauliflower rice and liquid aminos and cook for 3-5 minutes until soft. Serve immediately.

We paired our cauliflower rice with this crockpot sesame chicken recipe here and had an easy, healthy dinner that was thrown together in about 15 minutes!
