Spaghetti squash is one of my favorite vegetables because there’s so many different things you can do with it to replace carbs or pasta! You can turn it into a pizza crust, make healthier pasta dishes, stuff it – the possibilities are endless! I bought a spaghetti squash from the store and was looking for something new and adventurous to try. I turned to Pinterest and stumbled across this recipe from littlebitsof.com! She has tons of great recipes along with this one so I would definitely recommend checking out her stuff! You can find her blog as well as this recipe here! My dad loves chow mien but the original stuff you order from Chinese restaurants is loaded with sodium and other things that aren’t great for you so I decided to give this recipe a try and holy cow! It is so good! I added a few extra vegetables like zucchini and mushrooms but feel free to sub in whatever vegetables you’d like! My whole family loved it so I’d say it was a success!
- 1 large spaghetti squash
- 1/4 cup soy sauce or tamari (or coconut aminos to make paleo)
- 3 cloves garlic, minced
- 1 Tbsp. brown sugar (or coconut sugar)
- 2 tsp. freshly grated ginger
- 1/4 tsp. pepper
- 2 Tbsp. olive oil
- 1 onion, diced
- 3 stalks celery, sliced diagonally
- 2 C. cole slaw mix (shredded cabbage and carrots)
- 1 Zucchini, cut up in 1″ pieces
- 1/2 C. mushrooms
Cut a spaghetti squash in 1-1 1/2″ circles and spread out on a well greased pan. Bake at 400 degrees for 30-40 minutes, or until flesh is tender and edges are turning brown. Once done, scoop out flesh with a fork so it breaks apart into strings, set aside.
In a small bowl, whisk together soy sauce, garlic, brown sugar, ginger and white pepper; set aside.
Heat olive oil in a large skillet over medium high heat. Add onion and celery, mushrooms and cook, stirring often, until tender, about 3-4 minutes. Stir in cabbage and zucchini until heated through, about 1-2 minutes.
In a bowl, combine spaghetti squash, vegetables and soy sauce mixture and stir together until well combined. Serve immediately!
