Pizza Hummus

Hello everyone, sorry I haven’t posted in over a week! Taking 6 classes keeps me busy! But I’ve been cooking up a storm and am bringing you lots of recipes so be on the lookout! This recipe is for pizza hummus .. because lets face it, i love pizza and crave it probably twice a week.. not joking! I got home from work and found I had all the ingredients to make it so here it is!! You can eat it with veggies, pita chips, put it on sandwiches, or anything your heart desires!

Recipe:

  • 2 15 oz cans garbanzo beans, drained and rinse
  • 12 oz tomato puree/paste
  • 1/4 C. sun dried tomatoes
  • 1 Tbsp. dried oregano
  • 2 Tbsp. dried basil
  • 1 tsp. garlic powder
  • ½ tsp. red pepper flakes
  • 2 Tbsp. lemon juice
  • 2 Tbsp. tahini
Instructions
 Add drained & rinsed beans to a food processor and process until mashed. Add tomato puree and pulse until throughly processed.
Add the remaining ingredients and process until completely smooth. Scrape the sides and let it go for several minutes. I let mine go for about 5 minutes, the longer you blend, the smoother it will get (I added a tiny bit of water to mine).  Taste and adjust spices if needed.
Top with any kind of your favorite pizza toppings. I just topped mine with feta cheese, Yum!
